Palmyra coffee from Guatemala
On a farm in Guatemala called "Los suspiros", which means: with sighs in Spanish; Because of the gentleness of the breeze and the good air, and because of the beautiful view that it has, no one who passes by it can only breathe a sigh of relief and stand astonished before its sight.
It was founded by Juan Palicos in the early 1930s.
He planted coffee trees besides corn, tobacco and many others, at that time he was having difficulty transporting the harvest by hand, as he was carrying the coffee harvest on the backs of mules and traveling with them for long miles to transport it to the city and display it there.
This crop was treated by the honey-yellow method, where the coffee fruit is picked manually, then sorted and filtered in water vessels, then the coffee cherries are peeled, so that the green coffee beans remain surrounded by the honey layer, and then they are sorted on drying beds under the sun for a period ranging from 5 to 7 days, and when the humidity reaches the required level, the beds are shaded from the sun for two days.
The result of this treatment is a balanced texture and a wonderful blend of sweet and citrusy hints.
